ANNA Dutch Classic Caviar Carbonara

There's lots to love about Classic Caviar Carbonara, the buttery, eggy creaminess of the sauce, saltily laced with briny pops of ANNA Dutch Classic caviar and lemon zest: it’s comforting, but not in a sofa-bound kind of way. It feels like decadent restaurant dinner, only it takes hardly any time to cook. 

This is our most regular Friday dinner for two & we confess we do cheat a little with ready made spaghetti by La Molisana, available at good supermarkets & delicatessens.  You can easily swap for your favourite dried pasta or for the more adventurous, make your own!

The Recipe

  • 3 large egg yolks
  • 1 large egg
  • 1/2 cup finely grated Parmigiano-Reggiano
  • 1 tablespoon finely grated lemon zest
  • Kosher salt
  • Pepper
  • 60 grams ANNA Dutch Classic Caviar
  • Snipped dill, for garnish

Directions

  1. In a large bowl, beat the egg yolks with the whole egg, the cheese, lemon zest, 1/2 teaspoon of salt and 1 teaspoon of pepper. 
  2. Very gradually whisk in 1/2 cup of reserved hot pasta water to temper the eggs. 
  3. Add the pasta and half the caviar and vigorously toss until hot and creamy, 1 to 2 minutes. 
  4. Transfer to bowls and top with snipped dill and dollops of the remaining caviar.
